Zucchini relish
Ingredients/Components
- sugar - 5 c
- cornstarch - 1 Tbsp
- nutmeg - 3/4 tsp
- dry mustard - 1 Tbsp
- celery seed
- red pepper to taste - 1 item
- turmeric - 3/4 tsp
- pickling salt - 5 Tbsp
- white onions, chopped - 4 c
- coarsely grated zucchini - 12 c
- large red sweet pepper, grated - 1 item
- large green sweet pepper, grated - 1 item
- large yellow sweet pepper, grated optional - 1 item
- Drain and wash twice; set aside and prepare sauce
How to make zucchini relish:
Mix all the ingredients together and let stand overnight or at least 12 hours. Drain and wash twice; set aside and prepare sauce.Sauce:2 1/2 c. vinegar5 c. sugar1 Tbsp. dry mustard3/4 tsp. nutmeg red pepper to taste3/4 tsp. turmeric1 1/2 tsp. celery seed1 Tbsp. cornstarch Cook sauce until thickened slightly. Add vegetables to vinegar sauce and cook on low heat for 20 to 30 minutes. Fill jars and boil 10 minutes in hot water bath.
