Ingredients/Components
- salt and pepper to taste - 1 item
- oregano - 1 tsp
- olive oil - 2 Tbsp
- medium sized zucchini, thinly sliced and quartered - 1 item
- fresh tomato, cored, sliced and quartered - 1 item
How to make zucchini and tomatoes:
Saute zucchini in olive oil for about 5 minutes until tender. Add tomato and seasonings and cook for 5 minutes more. If desired, place mixture in shallow baking dish. Top with Mozzarella cheese and put under broiler until cheese melts.Recipe categories: Squash, Side dish, Tomato.
