Zucchini and carrot bread
Ingredients/Components
- cinnamon - 1 Tbsp
- vanilla - 1 Tbsp
- grated carrots - 1 c
- eggs, beaten - 3 item
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- unsifted flour - 2 c
- grated zucchini - 1 c
- salad oil - 1 c
- broken nut meats - 1 c
How to make zucchini and carrot bread:
Beat eggs; add oil, sugar, zucchini, carrots and vanilla to eggs. Sift dry ingredients and add to mixture. Fold in nut meats. Bake in large greased tube pan or 2 small loaf pans in a 325° oven for 1 hour. Check for doneness with toothpick.Recipe categories: Breads, Low sodium, Vegetables.
