  • cinnamon - 1 Tbsp
  • vanilla - 1 Tbsp
  • grated carrots - 1 c
  • eggs, beaten - 3 item
  • baking powder - 1/4 tsp
  • baking soda - 1 tsp
  • unsifted flour - 2 c
  • grated zucchini - 1 c
  • salad oil - 1 c
  • broken nut meats - 1 c

How to make zucchini and carrot bread:

Beat eggs; add oil, sugar, zucchini, carrots and vanilla to eggs. Sift dry ingredients and add to mixture. Fold in nut meats. Bake in large greased tube pan or 2 small loaf pans in a 325° oven for 1 hour. Check for doneness with toothpick.
