Ingredients/Components
- oil - 1/4 c
- oregano - 1/2 tsp
- salt and pepper - 1 item
- zucchini, cut into 1/2-inch slices - 6 item
- tomatoes, cut into eighths - 2 item
- ears of corn kernels, cut from cob - 4 item
How to make zucchini and corn:
In a large skillet, place on grill rack. Heat oil and saute tomatoes until mushy. Stir in zucchini and corn kernels. Add oregano. Stir to blend. Cover and simmer, stirring occasionally, until zucchini is tender. Season to taste with salt and pepper.Note: May cook on top of stove on medium heat until tender.
