Squash relish
Ingredients/Components
- sugar - 3 c
- salt - 1/2 c
- water - 3/4 c
- vinegar - 2 c
- celery seed - 3 tsp
- onion - 2 c
- pimento - 12 oz
- mustard seed - 3 Tbsp
- turmeric - 1 tsp
- squash - 8 c
- red bell peppers - 2 item
- green bell peppers - 2 item
How to make squash relish:
Chop squash, onions and peppers. Mix salt and water and pour over vegetables. Let stand for 2 hours.Drain salt water off and rinse vegetables. Combine pimento, vinegar, sugar, celery seed, mustard seed and turmeric; bring to a boil. Pour over vegetables and bring to a boil. Do not cook. Pack in hot jars.
