Squash relish



  • sugar - 4 c
  • celery seed - 2 tsp
  • white vinegar
  • turmeric - 1 tsp
  • onions - 4 c
  • pickling spices - 2 tsp
  • squash - 12 c
  • large bell peppers - 2 item
  • large jars pimento peppers - 2 item

How to make squash relish:

Grind the first 4 ingredients. Sprinkle 5 teaspoons of salt over and let set overnight in refrigerator. Next a.m. rinse mixture well and drain in colander. Set aside.

Boil together white vinegar, pickling spices, turmeric and celery seed. Boil good; strain good. Add sugar and cook until sugar dissolves and add squash mixture. Bring to a good boil; don't overcook. Put in hot sterilized jars and seal.
