Squash relish
Ingredients/Components
- sugar
- vinegar - 2 c
- celery seed - 2 tsp
- onion - 2 c
- mustard seed - 2 tsp
- turmeric - 1 tsp
- squash - 8 c
- large bell peppers - 2 item
- large jar pimentos - 1 item
How to make squash relish:
Soak squash overnight in refrigerator covered in water with 1/2 cup salt. Drain salt water off squash and wash well and drain again.Chop in food processor, squash, onion, bell pepper and pimentos.
Prepare vinegar, sugar, turmeric, mustard seed, and celery seeds. Pour mixture over squash mixture and bring to a boil. Boil about 7 or 8 minutes. Put in jars and seal. Enjoy all year round.
