  • flour - 3 c
  • baking soda - 2 tsp
  • sugar - 2 c
  • cinnamon - 1 tsp
  • salt - 1/2 tsp
  • eggs, beaten - 3 item
  • coconut - 1/2 c
  • chopped walnuts - 1 c
  • oil
  • small can crushed pineapple - 1 item
  • grated, unpeeled zucchini - 2 c
  • vanilla - 2 tsp

How to make zucchini pineapple cake:

Sift and mix all dry ingredients. Mix the rest of the ingredients. Mix dry ingredients to the liquid mixture. Bake in a 9 x 13-inch pan. Bake at 350° for 1 hour. You can bake in 2 round cake pans. Ice with powdered sugar icing.
