  • sour cream - 1 c
  • shredded carrots - 1 c
  • chopped onion - 1/4 c
  • can cream of chicken soup - 1 item
  • margarine, melted - 1/2 c
  • yellow squash, sliced - 2 lb
  • herb seasoning mix - 8 oz

How to make squash casserole:

Cook squash and onion in boiling salted water for 5 minutes. Drain. Combine soup and sour cream together. Stir in carrots. Mix squash and onion. Mix seasoning mix and margarine together and place 1/2 of mixture in bottom of a 7 x 12-inch cooking dish. Spoon in squash and top with remaining crumbs on top. Bake at 350° for 25 to 30 minutes.
