Ingredients/Components

  • sugar - 1 tsp
  • stick margarine - 1/2 item
  • egg, slightly beaten - 1 item
  • grated cheese - 1/2 c
  • salt and pepper to taste - 1 item
  • mayonnaise - 1/2 c
  • onions, chopped - 1/2 c
  • bell pepper, chopped - 1/4 c
  • squash - 1 lb
  • pecans, chopped or water chestnuts - 1/2 c

How to make squash casserole:

Cook squash. Drain and mash. Add all ingredients (except margarine and cracker crumbs). Place in 2-quart casserole, greased. Top with crumbs and dot with margarine. Bake at 350° for 35 to 40 minutes. (Suitable for freezing.) Serves 6 to 8.
