Ingredients/Components

  • sour cream - 1 c
  • stick margarine - 1/2 item
  • small onion, finely chopped - 1 item
  • carrots, grated - 2 item
  • pimiento - 2 oz
  • can cream of celery or chicken soup - 1 item
  • herb seasoned stuffing mix
  • squash, cooked until tender - 2 c

How to make squash casserole:

Cut squash into cubes. Cook in salted water until firm and tender. Drain. Do not mash. Melt margarine and mix with stuffing mix. Mix remaining ingredients, folding in squash last. Put half of stuffing in bottom of casserole. Add squash mixture. Top with remaining stuffing. Cook in a 350° oven until bubbly, about 1/2 hour.
