- sour cream - 1 (8
- butter or margarine - 1/2 c
- chopped onion - 1/2 c
- shredded carrot - 1 c
- can cream of chicken soup - 1 item
- sliced yellow squash - 6 c
How to make squash casserole:
Cook sliced squash and onion in boiling water for 15 minutes and drain. Combine cream of chicken soup and sour cream. Stir in shredded carrot. Fold in drained squash and onion. Combine stuffing mix and butter. Spread half of stuffing mixture in bottom of 12 x 7 1/2-inch baking dish. Spoon vegetables mix on top. Sprinkle remaining stuffing mix over top.
