  • chopped nuts optional - 1/2 c
  • ground cloves - 1/2 tsp
  • orange juice - 2/3 c
  • orange peel - 2 tsp
  • shredded, unpeeled zucchini - 2 c
  • all-purpose or unbleached flour
  • Grease and flour bottom only of two 8 x 4-inch or 9 x 5-inch loaf pans

How to make zucchini orange bread:

Heat oven to 350°. Grease and flour bottom only of two 8 x 4-inch or 9 x 5-inch loaf pans. In large bowl, beat eggs until thick and lemon colored. Add sugar gradually. Stir in oil, orange juice and zucchini. Lightly spoon flour into measuring cup
