Ingredients/Components

  • pkg - 1 oz
  • sour cream - 1 c
  • chopped onion - 1/4 c
  • shredded carrot - 1/2 1
  • can cream of chicken soup - 1 item
  • melted butter or margarine - 1/2 c
  • yellow summer squash, sliced 6 c - 2 lb

How to make summer squash casserole:

Cook squash and onions in boiling salt water for 5 minutes. Drain and mash squash. Combine soup and sour cream. Stir in carrots; add squash and onions. Combine stuffing with butter. Spread 1/2 of stuffing in bottom of large baking dish. Spoon squash mixture on top. Add remaining stuffing and bake. Bake at 350° for 25 to 30 minutes. Serves 6.
