Summer squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- chopped onion - 1/4 c
- shredded carrot - 1/2 1
- can cream of chicken soup - 1 item
- melted butter or margarine - 1/2 c
- yellow summer squash, sliced 6 c - 2 lb
How to make summer squash casserole:
Cook squash and onions in boiling salt water for 5 minutes. Drain and mash squash. Combine soup and sour cream. Stir in carrots; add squash and onions. Combine stuffing with butter. Spread 1/2 of stuffing in bottom of large baking dish. Spoon squash mixture on top. Add remaining stuffing and bake. Bake at 350° for 25 to 30 minutes.
