Ingredients/Components

  • pkg - 1 oz
  • butter or margarine - 1/2 c
  • dairy sour cream - 1 c
  • chopped onion - 1/4 c
  • shredded carrot - 1 c
  • can cream of chicken soup - 1 item
  • 6 c - 2 lb

How to make summer squash casserole:

Cook squash and onion in boiling salted water for 5 minutes. Drain. Mix soup and sour cream. Stir in carrots. Fold in drained squash and onion. Combine stuffing mix and melted margarine. Spread half of stuffing mix in bottom of 12 x 7 1/2 x 2-inch baking dish or pan. Spoon on vegetable mixture. Sprinkle remaining stuffing mix on top. Bake in a 350° oven for 25 to 30 minutes.
