Summer squash casserole
Ingredients/Components
- pkg - 1 oz
- butter or margarine - 1/2 c
- dairy sour cream - 1 c
- chopped onion - 1/4 c
- shredded carrot - 1 c
- can cream of chicken soup - 1 item
- 6 c - 2 lb
How to make summer squash casserole:
Cook squash and onion in boiling salted water for 5 minutes. Drain. Mix soup and sour cream. Stir in carrots. Fold in drained squash and onion. Combine stuffing mix and melted margarine. Spread half of stuffing mix in bottom of 12 x 7 1/2 x 2-inch baking dish or pan. Spoon on vegetable mixture. Sprinkle remaining stuffing mix on top.
