Squash casserole
Ingredients/Components
- sugar - 1/8 tsp
- sour cream - 1 c
- butter or margarine - 1/4 c
- salt - 1 tsp
- water - 1 c
- pepper - 1/4 tsp
- sharp Cheddar cheese, cubed - 1 c
- soft bread crumbs, buttered - 1 c
- yellow summer squash, sliced - 2 lb
How to make squash casserole:
Add squash, salt and sugar to water in saucepan; cook for 20 minutes or until tender, then drain in a colander. Return squash to saucepan, add butter and mash with a potato masher. Blend in sour cream, cheese and pepper. Turn into baking dish, top with crumbs. Bake in a 350° oven for 20 minutes or until bubbly and crumbs are browned.
