Ingredients/Components

  • sugar - 1/8 tsp
  • sour cream - 1 c
  • butter or margarine - 1/4 c
  • salt - 1 tsp
  • water - 1 c
  • pepper - 1/4 tsp
  • sharp Cheddar cheese, cubed - 1 c
  • soft bread crumbs, buttered - 1 c
  • yellow summer squash, sliced - 2 lb

How to make squash casserole:

Add squash, salt and sugar to water in saucepan; cook for 20 minutes or until tender, then drain in a colander. Return squash to saucepan, add butter and mash with a potato masher. Blend in sour cream, cheese and pepper. Turn into baking dish, top with crumbs. Bake in a 350° oven for 20 minutes or until bubbly and crumbs are browned. Yields 6.
