  • pkg - 2 oz
  • eggs, well beaten - 6 item
  • pepper - 1 Tbsp
  • grated Parmesan cheese - 1/2 c
  • garlic salt
  • melted butter or margarine - 3/4 c
  • thyme - 1/2 tsp
  • herb seasoned stuffing mix - 3 c
  • large onion, chopped finely - 1 item

How to make spinach balls:

Cook spinach according to package directions. Squeeze well to remove moisture and drain. Combine spinach and all the other ingredients, mixing well. Shape mixture into 3/4-inch balls and place on lightly greased cookie sheets. Bake at 325° for 15 to 20 minutes. Yields 11 dozen.

The balls can be frozen before baking. Place balls on cookie sheets and freeze until firm. Once frozen, put balls into plastic bags and store in freezer. Thaw slightly and cook 20 to 25 minutes at 325°.
