Ingredients/Components

  • grated carrots - 1 lb
  • whipping cream - 1 c
  • Worcestershire sauce - 1 1
  • can chicken broth - 1 item
  • potatoes - 5 lb
  • bunch green onions, chopped - 1 item
  • half and half cream - 1 pt
  • to 4 stalks celery, chopped - 3 item
  • stick Parkay margarine - 1 item

How to make potato soup:

Cook potatoes with jackets until done.

Saute onions, carrots, celery, salt and pepper and Worcestershire sauce in Parkay margarine. Saute while potatoes are cooking. Peel potatoes and put in blender with the chicken broth, half and half and whipping cream. Pour in liquids alternately while blending potatoes and sauteed vegetables. If need more liquid, add milk.

Note: Makes a big roaster full. Is very good frozen; can divide and put in smaller containers. As it sets, it seasons. Good to serve with cornbread.
