  • sour cream - 1 pt
  • butter - 1/4 c
  • can cream of chicken soup - 1 item
  • crushed cornflakes - 1 item
  • grated Cheddar cheese
  • green onions, chopped - 1/2 c
  • medium size potatoes - 8 item

How to make potato casserole:

Boil the potatoes until tender (20 to 30 minutes). Cool and grate fine. Heat 1/4 cup butter with the soup in a saucepan. Blend in the sour cream, green onion and cheese. Stir in the grated potatoes. Blend well and transfer to a buttered casserole. Top with crushed cornflakes and tablespoon butter. Bake at 350° for 45 minutes. This can be made ahead and frozen.
