California casserole
Ingredients/Components
- sour cream - 2 c
- butter or margarine - 1/4 c
- salt - 1/2 tsp
- pepper - 1/8 tsp
- chopped onion - 1 c
- chopped parsley - 1 item
- cream-style cottage cheese - 1 c
- large bay leaf, crumbled - 1 item
- freshly cooked white rice - 4 c
- grated sharp natural Cheddar cheese - 2 c
- size cans green chiles, drained, halved lengthwise, leaving seeds - 3 oz
How to make california casserole:
Preheat oven to 375°. Lightly grease a 12 x 8 x 2-inch baking dish. In hot butter in large skillet, saute onion until golden, about 5 minutes. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper. Toss lightly to mix well. Layer half the rice mixture in bottom of baking dish, then half the chiles. Sprinkle with half the cheese. Repeat the layers. Bake, uncovered, 25 minutes, or until bubbly and hot. Sprinkle with chopped parsley.Recipe categories: Side dish, Cheese, Casseroles.
