Stuffed zucchini
Ingredients/Components
- salt - 1 tsp
- butter - 2 Tbsp
- beaten eggs - 2 item
- pepper - 1/8 tsp
- soft bread crumbs - 3 c
- medium zucchini - 2 item
- small minced onion - 1 item
- regular grated cheese - 1/2 c
How to make stuffed zucchini:
Cut ends off the zucchini. Cut zucchini lengthwise. Do not pare the zucchini. Scoop out pulp. Cook (boil) pulp, bread crumbs, salt, pepper, onion and eggs for 5 minutes. Spoon into zucchini shells. Dot with butter. Sprinkle on cheese. Bake at 350° for 30 minutes.Recipe categories: Squash, Side dish, Vegetables.
