Buckaroo beans
Ingredients/Components
- brown sugar - 2 Tbsp
- water
- chili powder - 2 tsp
- oregano - 1/2 tsp
- salt to taste - 1 item
- cloves garlic, chopped - 2 item
- bay leaves - 2 item
- green peppers, chopped - 1/2 c
- canned tomatoes - 2 c
- 1/2 onions, chopped - 1 item
- dry pinto beans - 2 c
- salt pork, cut up - 1/4 lb
How to make buckaroo beans:
Cook beans in boiling water for 2 minutes; remove from heat and let stand 1 hour. Return to heat; add onions, garlic, bay leaves and salt pork. Cover and bring to a boil; reduce heat and simmer and cook for 1 1/2 hours. Add remaining ingredients except salt. Cover and bring to a boil; reduce heat to simmer and cook for 2 more hours.
