Ingredients/Components

  • brown sugar - 2 Tbsp
  • water
  • chili powder - 2 tsp
  • oregano - 1/2 tsp
  • salt to taste - 1 item
  • cloves garlic, chopped - 2 item
  • bay leaves - 2 item
  • green peppers, chopped - 1/2 c
  • canned tomatoes - 2 c
  • 1/2 onions, chopped - 1 item
  • dry pinto beans - 2 c
  • salt pork, cut up - 1/4 lb

How to make buckaroo beans:

Cook beans in boiling water for 2 minutes; remove from heat and let stand 1 hour. Return to heat; add onions, garlic, bay leaves and salt pork. Cover and bring to a boil; reduce heat and simmer and cook for 1 1/2 hours. Add remaining ingredients except salt. Cover and bring to a boil; reduce heat to simmer and cook for 2 more hours. Salt to taste.
