Ingredients/Components
- dash of garlic powder - 1 item
- cloves garlic, minced - 2 item
- olive oil - 2 tsp
- sliced onion - 1 c
- dash of ground red pepper - 1 item

- yellow bell pepper rings - 1 c
- can Mexican style stewed tomatoes with jalapeno peppers and spices, undrained - 1 1/2
How to make orange roughy:
Heat oil in a large nonstick skillet over medium heat. Add onion and garlic, saute 7 minutes or until tender. Add bell pepper and tomatoes. Cook over medium-high heat 3 minutes. Add fish. Sprinkle with garlic powder and pepper. Cover, reduce heat and simmer 5 minutes. Turn fish over. Cover and simmer another 5 minutes or until fish flakes easily when tested with a fork. Transfer fish to serving plate reserving cooking sauce in skillet. Spoon sauce over fish.Recipe categories: Fish, Saltwater fish, Orange roughy.
