Ingredients/Components

  • sugar - 2 Tbsp
  • eggs - 3 item
  • milk - 3/4 c
  • salt - 1/2 tsp
  • flour - 6 Tbsp
  • grated lemon rind - 1 tsp
  • honey - 1/2 c
  • orange juice - 2 tsp
  • grated orange rind - 1 tsp
  • ground nuts - 1/2 c
  • your favorite liqueur - 1 Tbsp
  • Mix sugar, salt and flour well and stir quickly into the eggs

How to make nalesniki:

Beat eggs. Mix sugar, salt and flour well and stir quickly into the eggs. Add milk and beat hard so batter is smooth with no lumps. Have ready 1 or 2 (6-inch) frying pans, lightly buttered and well heated. Pour just enough batter into each to cover bottom of pan when it is tilted and swirled. Shake the pan over the burner until they are brown on bottom and firm to touch on top. Do not turn. Set each aside to cool. These can be prepared several hours before using. Makes 16 to 18 pancakes.Honey Nut Filling:1/2 c. butter1 tsp. grated orange rind1 tsp. grated lemon rind1/2 c. honey2 tsp. orange juice1/4 tsp. salt1/2 c. ground nuts1 Tbsp. your favorite liqueur Cream butter and work in rest of ingredients. Store in refrigerator until needed. Spread on each pancake. Roll up neatly. Place in greased pan in oven. Heat at 375° for 10 minutes. Sprinkle with powdered sugar and serve on hot plates immediately. Fillings can vary. Spread with jam, apple filling or cottage cheese filling and roll. Sprinkle with powdered sugar and warm in oven for 15 minutes.
