Ingredients/Components
- sugar - 1 c
- cinnamon - 1/2 tsp
- salt - 1/2 tsp
- flour
- nutmeg - 1/4 tsp
- sticks margarine - 3 item
- lemon juice - 2/3 c
- zucchini, sliced, peeled and seeded - 6 8
How to make zucchini pie:
Crust:4 c. flour2 c. sugar1/2 tsp. salt3 sticks margarine Slice, peel and remove seeds from zucchini. Cook in lemon juice until tender. Add 1 cup sugar, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg. Simmer 1 minute. Add 1/2 cup crust mixture to thicken. Cool.Combine dry ingredients and cut in margarine until crumbly. Put half of mixture into ungreased 13 x 9-inch pan. Bake 10 minutes at 375°. Put the cooled filling on the crust. Add 1 teaspoon cinnamon to remaining crust mixture. Sprinkle on top. Bake 30 to 40 minutes at 375°. (Can be baked in a jellyroll pan.)
