Mexican cornbread
Ingredients/Components
- sugar - 1/4 c
- unsweetened applesauce - 1/2 c
- onion, diced - 1/4 c
- can creamed corn - 1 1/2
- red pepper, diced - 1/4 c
- meal mix
- egg substitute or 4 egg whites - 1/2 c
- crushed red peppers or two jalapeno peppers, diced - 1/2 tsp
How to make mexican cornbread:
Mix in bowl the egg, applesauce, corn, peppers, onion, jalapeno peppers and sugar. Add corn mix. Stir just until blended (mixture will be thick). Pour into hot greased iron skillet. Bake at 375° in preheated oven for 45 to 55 minutes. Insert toothpick in center. Bread is done when toothpick comes out clean.Recipe categories: Breads, Quick breads, North american.
