Ingredients/Components
- margarine - 3/4 c
- sugar
- eggs - 3 item
- sifted flour
- salt - 1/4 tsp
- soda - 1/4 tsp
- buttermilk - 3/4 c
- rind of 1 lemon
- chopped nuts - 3/4 c
- Glaze: juice of 1 lemon
How to make lemon loaf:
Glaze: juice of 1 lemon1/4 c. sugar Mix margarine, sugar, eggs, salt, soda and buttermilk, then add lemon rind, nuts and flour. Bake 1 hour at 325°. Bread should end up with large crack across the top. Let cool 10 minutes. Remove from pan and stab with toothpick and drizzle glaze over top.I make this in medium size loaf pans (7 3/8 x 3 5/8-inch).
To prepare glaze, bring juice of lemon and sugar to a boil, then cool.
