Marinated carrots
Ingredients/Components
- sugar - 1/4 c
- salt - 1/2 tsp
- cooking oil - 1/2 c
- cider vinegar - 1/3 c
- pepper - 1/4 tsp
- can tomato soup - 1/2 oz
- dried mustard - 1/2 tsp
- medium green pepper, cut into thin strips - 1 item
- medium onion, thinly sliced and separated into rings - 1 item
- carrots, sliced diagonally 1/8 to 1/4-inch thick - 2 lb
How to make marinated carrots:
Place carrots and 2 tablespoons of water in a 2-quart microwave-safe utensil. Cover with Glad wrap and microwave at Full power for 10 minutes or until carrots are tender, but crisp. Let stand covered for 10 to 15 minutes. Drain and cool. Add onion rings and green pepper strips.In small jar, combine soup with remaining ingredients; shake well to blend. Pour over vegetables. Marinate several hours in refrigerator.
To serve, remove vegetables from marinade and place in serving dish. Makes 6 servings.
