Hummingbird cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- vanilla - 1/2 tsp
- pkg - 16 oz
- salt - 1 tsp
- flour - 3 c
- oil - 1 c
- eggs, beaten - 3 item
- baking soda - 1 tsp
- chopped walnuts - 1 c
- can crushed pineapple, drained - 1 item
- walnuts - 1/2 c
- diced bananas - 2 c
- Add eggs and oil until moist
How to make hummingbird cake:
Combine first 5 ingredients. Add eggs and oil until moist. Do not beat. Stir in vanilla, pineapple, 2 cups bananas and walnuts. Spoon batter into three 9-inch greased and floured cake pans. Bake at 350° for 25 to 30 minutes. Cool in pan 10 minutes. Remove from pans to cooling rack to finish cooling. Frost when completely cool.Frosting:8 oz. cream cheese16 oz. pkg. powdered sugar1 tsp. vanilla1/2 c. walnuts Combine all ingredients. Beat until peaks form.
