Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla - 1/2 tsp
  • pkg - 16 oz
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • chopped walnuts - 1 c
  • can crushed pineapple, drained - 1 item
  • walnuts - 1/2 c
  • diced bananas - 2 c
  • Add eggs and oil until moist

How to make hummingbird cake:

Combine first 5 ingredients. Add eggs and oil until moist. Do not beat. Stir in vanilla, pineapple, 2 cups bananas and walnuts. Spoon batter into three 9-inch greased and floured cake pans. Bake at 350° for 25 to 30 minutes. Cool in pan 10 minutes. Remove from pans to cooling rack to finish cooling. Frost when completely cool.Frosting:8 oz. cream cheese16 oz. pkg. powdered sugar1 tsp. vanilla1/2 c. walnuts Combine all ingredients. Beat until peaks form. Frost cooled cake.
