Creamed asparagus and mushrooms
Ingredients/Components
- salt - 1/2 tsp
- flour - 1/2 Tbsp
- butter - 3 Tbsp
- heavy cream - 1 c
- paprika - 1 item
- pepper - 1/2 tsp
- minced onion - 1 Tbsp
- mushrooms - 1 lb
- dash of nutmeg - 1 item
- fresh or frozen asparagus - 3 lb
How to make creamed asparagus and mushrooms:
Remove stems from mushrooms. Wipe caps and slice. Saute mushrooms in butter with onion until golden. Prepare asparagus (cooked) as usual; cut into 1 1/2-inch pieces. Heat 1 tablespoon butter and blend in flour. When lightly browned, add cream. Heat slowly, stirring occasionally, until thickened. Season with salt, pepper and nutmeg. Add sauteed mushrooms and onion; keep warm. Drain asparagus; place in dish. Top with mushroom sauce. Add a sprinkle of paprika, if desired. Serves 8.Recipe categories: Side dish, Asparagus, Mushroom.
