Confetti rice



  • long grain rice, cooked - 1 c
  • sliced bacon, diced - 1/2 lb
  • soy sauce optional - 1 item
  • fresh or frozen green peas - 1/2 c
  • diced carrots, parboiled - 1 c
  • diced celery, parboiled - 1 c

How to make confetti rice:

In a large skillet, cook bacon until crisp. Remove to paper towels. Add rice, carrots, celery and peas; cook until heated through, about 5 to 7 minutes. Stir in bacon. Serve with soy sauce, if desired. Yield: 6 to 8 servings.
