Ingredients/Components

  • milk - 2 Tbsp
  • flour - 2 Tbsp
  • butter - 1 Tbsp
  • white pepper - 1/4 tsp
  • thyme - 1/2 tsp
  • medium potatoes, peeled and diced - 4 item
  • bunch green onions, sliced - 1 item
  • ham stock, fat removed - 1 qt
  • leftover ham from bone - 1 item

How to make cream of potato soup:

Place stock, vegetables, seasonings and ham in a medium stock pot. Simmer 45 minutes or until vegetables are tender. Stir in butter. Mix flour and some of the hot broth in a small bowl, stirring until smooth. Return to the pot, stirring into the soup. Add milk. Serves 4.
