Cream of anything soup
Ingredients/Components
- sugar - 4 tsp
- butter - 4 Tbsp
- heavy cream - 1 c
- lemon juice - 1 Tbsp
- chicken broth - 3 c
- chopped parsley - 2 Tbsp
- white wine - 1/2 c
- tarragon - 1 tsp
- scallions, sliced - 6 item
- any vegetable, trimmed, washed and chopped - 1 lb
How to make cream of anything soup:
In large pot, melt butter. Add vegetables and scallions and cook, stirring often, until vegetables are soft but not browned (about 20 minutes). Add chicken stock, wine, parsley, lemon juice, tarragon and sugar. Simmer, covered, about 30 minutes until vegetables are very soft. Puree soup in blender or food processor and transfer to large bowl. Add heavy cream and stir thoroughly. Season to taste with salt and pepper.
