Ingredients/Components

  • salt - 1 tsp
  • egg yolks - 2 item
  • all-purpose flour - 1/2 c
  • can evaporated milk - 1 oz
  • oleo or butter - 1/4 c
  • crabmeat - 1 lb
  • onion, chopped fine - 1 c
  • stalk celery, chopped fine - 1 item
  • red pepper - 1/2 tsp
  • grated Cheddar cheese mild - 1/2 lb

How to make crabmeat au gratin:

Saute onion and celery in oleo or butter until onion is wilted. Blend flour in well with this mixture. Pour in the milk gradually, stirring constantly. Add egg yolks, salt and red and black peppers. Cook for 5 minutes. Put crabmeat in a bowl suitable for mixing and pour cooked sauce over the crabmeat; blend well. Sprinkle with Cheddar cheese. When ready to serve, put in a hot oven for about 5 to 10 minutes.
