Ingredients/Components

  • butter or margarine - 4 Tbsp
  • salt - 1 tsp
  • flour - 1 c
  • eggs, beaten - 3 item
  • heavy cream
  • dry mustard - 1 tsp
  • bread crumbs - 1 c
  • chopped parsley - 4 Tbsp
  • medium onion, chopped - 1 item
  • crab meat - 1 lb

How to make crab cakes:

Melt the butter in a skillet and cook the onion until just transparent. Add the crumbs and blend well. Mix with the crab meat, beaten eggs and seasonings. Add just enough cream to hold the mixture together. Shape into large flat cakes. Roll each cake in flour and fry in butter or oil until nicely brown and cooked through.
