Crabmeat au gratin
Ingredients/Components
- salt - 1 tsp
- flour - 1/2 c
- egg yolks - 2 item
- grated Cheddar cheese - 1/2 lb
- can evaporated milk - 1 oz
- oleo or butter - 1/2 lb
- black pepper - 1/2 tsp
- onion, chopped fine - 1 c
- stalk celery, chopped fine - 1 item
- red pepper - 1/2 tsp
- white crabmeat - 1 lb
How to make crabmeat au gratin:
Saute onion and celery in butter until onions are wilted. Blend flour in well with this mixture. Pour in the milk gradually, stirring constantly. Add egg yolks, salt and red and black peppers. Cool for 5 minutes. Put crabmeat in a bowl suitable for mixing and pour the cooked sauce over the crabmeat. Blend well, then transfer into a lightly greased casserole dish and sprinkle with grated Cheddar cheese. Bake at 375° for 10 to 15 minutes.Recipe categories: Seafood, Shellfish, Crab.
