Ingredients/Components

  • milk - 2 c
  • salt - 1 tsp
  • flour
  • margarine - 1/4 c
  • medium onion, chopped fine - 1 item
  • green pepper, chopped fine - 3 Tbsp
  • grated sharp cheese - 3/4 c
  • pimento, chopped - 1 Tbsp
  • cubed cooked potatoes - 3 c

How to make company potatoes:

Cook onion and green pepper in the margarine 5 minutes. Add pimento and flour; stir. Add milk; stir and cook until thickened. Season with salt. Add potatoes and pour into greased 1 1/2-quart casserole. Top with cheese. Bake for 30 minutes at 350°. Serves 6.
