Chicken salad puffs
Ingredients/Components
- eggs - 4 item
- salt - 1/4 tsp
- flour - 1 c
- water - 1 c
- margarine - 1/2 c
- chopped onion - 1/4 c
- chopped celery - 1/4 c
- mayonnaise - 1 item
- cooked chicken breasts
- finely shredded Cheddar cheese optional - 1 c
How to make chicken salad puffs:
Chicken Salad:2 c. cooked chicken breasts1/4 c. chopped celery1/4 c. chopped onion mayonnaise Puffs: Combine margarine, salt and water in 2-quart saucepan. Bring to rolling boil, stirring occasionally. Remove from heat. Add flour and beat well. Cook until mixture forms a ball, stirring constantly. Remove from heat. Add eggs, one at a time, beating well after each. Beat until smooth (will have a velvety texture). Stir in cheese. Drop by teaspoonfuls onto lightly greased cookie sheet. Bake at 400° for 20 minutes. Cool. Split puffs and stuff with chicken salad. Can also be stuffed with crab salad, or pudding!Chicken Salad: Chop chicken; add celery, onion, salt and pepper to taste. Mix with small amount of mayonnaise.
