Ingredients/Components

  • medium boned, skinless chicken breast halves - 4 item
  • nonstick spray coating - 1 item
  • sliced fresh mushrooms - 1/2 c
  • sliced green onion - 2 Tbsp
  • water - 2 Tbsp
  • salt - 1/4 tsp
  • dry Marsala or dry sherry - 1/4 c

How to make chicken marsala:

Place 1 piece of chicken, boned side up, between 2 pieces of clear plastic wrap. Pound with a meat mallet to about 1/4-inch thickness. Repeat with remaining breasts. Spray a large skillet with nonstick spray coating. Preheat skillet over medium heat. Add 2 chicken breasts. Cook for 2 to 3 minutes, or until no pink remains. Transfer to a platter. Repeat with remaining breasts.

Carefully add mushrooms, green onion, water and salt to skillet. Cook over medium heat until mushrooms are tender and most of the liquid is evaporated. Add Marsala to skillet. Heat through. Spoon sauce over chicken.
