Chicken scallopini
Ingredients/Components
- margarine or butter, melted - 2 Tbsp
- lemon juice - 1 Tbsp
- egg - 1 item
- Italian dry bread crumbs - 1/2 c
- grated Parmesan cheese - 1/4 c
- chopped fresh basil - 1 Tbsp
- salt - 1/4 tsp
- pepper - 1/8 tsp
- boneless chicken breast halves each 1/4-inch thick - 8 item
How to make chicken scallopini:
Put butter in medium bowl; beat in lemon juice and egg with fork. In another bowl, mix bread crumbs, cheese, basil, salt and pepper. Dip chicken slices into egg mixture; coat evenly with crumb mixture. In a large frying pan, melt 2 teaspoons of butter. Cook chicken over low heat, turning once, until done.
