Ingredients/Components

  • milk - 2 c
  • butter - 4 Tbsp
  • salt and pepper to taste - 1 item
  • parsley - 2 Tbsp
  • medium onion, chopped - 1 item
  • dill weed - 1 Tbsp
  • large head cauliflower - 1 item
  • to 5 cloves garlic, minced - 4 item
  • to 3 medium potatoes - 2 item
  • flour 4 for extra thickness - 3 Tbsp

How to make cauliflower and potato soup:

Peel and cut potatoes. Cut cauliflower coarsely. Cook together in just enough water to cover. Saute onion and garlic in butter until onion is transparent. Gradually add flour to the butter and onions. Stir until pasty, over low heat. Add milk, stirring constantly. Heat until mixture thickens.

Cook potatoes and cauliflower until very well done. Mash together in with the cooking water. Stir in milk mixture and add spices. Heat until soup thickens. Add in Velveeta for a cheesy taste.
