Ingredients/Components

  • bacon or ham, diced - 1/2 lb
  • medium onion - 1/2 item
  • ribs celery - 3 item
  • water - 1 qt
  • pepper - 1/4 tsp
  • chicken bouillon cubes - 4 item
  • medium potatoes, diced - 5 item
  • milk for richer soup use cream
  • butter, melted
  • flour - 1/4 c

How to make potato soup:

Roux:1/4 c. butter, melted1/4 c. flour Saute bacon, onion and celery until tender. Add water, pepper, seasoned salt and bouillon cubes. Cook on low for 20 minutes. Add potatoes and simmer until done. Add milk, stirring constantly. (Do not boil. Boiling will make milk curdle.) Thicken with roux.

To prepare roux, mix melted butter with flour. Make a paste and cook on stove until brown. Add 1 cup of soup, slowly, a little at a time, to the flour and butter mixture. Heat until free of lumps, then add to rest of soup. Cook for 5 minutes.
