- sugar - 2 c
- eggs - 2 item
- milk - 1 c
- flour - 2 c
- butter - 1 c
- baking soda - 1 tsp
- nuts - 1 c
- pure vanilla - 1 tsp
- baking cocoa - 2 c
- mashed potatoes, cold - 1 c
How to make potato cake:
Cream butter and sugar until fluffy. Add 1 egg at a time. Blend in potatoes and vanilla. Combine flour, cocoa and baking soda. Add flour mixture and milk. Stir in nuts. Pour into a greased 13 x 9-inch baking pan. Bake at 350° for 40 to 45 minutes.Recipe categories: Lunch/snacks, Side dish, Potato.
