Ingredients/Components

  • milk - 2 c
  • flour - 1/4 c
  • butter - 1/4 c
  • cornstarch
  • soda - 1/8 tsp
  • heavy cream - 1 c
  • Velveeta cheese - 1 c
  • salt and pepper to taste - 1 item
  • onion, diced - 1/2 c
  • celery, diced - 1/2 c
  • carrots, diced - 1/2 c
  • chicken stock - 1 qt
  • parsley, chopped fine - 2 Tbsp

How to make canadian cheese soup:

Melt butter in large pan. Add onion, celery and carrots. Saute over low heat until soft. Add flour and cornstarch and cook until bubbly. Add stock and milk and stir until smooth. Add soda and cheese. Season with salt and pepper. Add parsley a few minutes before you serve. Good with broccoli or cauliflower added.
