Floating island
Ingredients/Components
- sugar - 10 tsp
- vanilla - 1 tsp
- milk - 2 c
- eggs, separated - 3 item
- pinch of salt - 1 item
How to make floating island:
Beat egg whites until foamy. Gradually beat in 6 tablespoons sugar; beat until stiff. Bring milk to a boil with salt, vanilla and remaining 1/4 cup of sugar in a saucepan. Drop meringue mixture by tablespoon into milk and poach the island until they are firm, turning them to cook on both sides. Remove with a slotted spoon.Beat the egg yolks well; gradually add hot milk used to poach meringues. Cook over low heat, stirring constantly, until thick. Pour custard into flat dish. Cool. At serving time, top custard with poached meringues. Makes 4 to 6 servings.
