Beef and cheese enchiladas
Ingredients/Components
- Velveeta cheese - 1 lb
- can cream of chicken soup - 1 item
- ground beef - 1 lb
- can evaporated milk - 3/4 item
- small jar pimentos - 1 item
- medium onion, chopped - 1 item
- Cheddar cheese - 2 c
- small can chopped green chilies - 1 item
- can enchilada sauce - 1 item
- count corn tortillas - 12 item
How to make beef and cheese enchiladas:
Mix Velveeta cheese, pimentos, green chilies, cream of chicken soup, milk and enchilada sauce. Heat slowly until cheese has melted. Brown meat while soup mixture is cooking.Fix tortillas in hot oil, one at a time, until just soft. Roll meat, Cheddar cheese and onions in corn tortilla. Put in a single layer in a deep pan. Pour cheese and soup mixture over enchiladas and bake at 425° for 20 minutes or until hot and bubbly.
