Ingredients/Components

  • Velveeta cheese - 8 oz
  • can cream of chicken soup - 1 item
  • grated cheese - 1/2 lb
  • ground beef - 1 lb
  • can cream of mushroom soup - 1 item
  • small onion, chopped - 1 item
  • Monterey Jack cheese - 8 oz
  • can enchilada sauce - 1 item
  • taco seasoning to taste - 1 2
  • corn tortilla shells soft, cut in half - 1 2

How to make mexican delight:

Brown meat and onion; drain off fat. Add taco seasoning and enough water to moisten mixture. Mix soups and sauce together. Melt Monterey Jack cheese and Velveeta cheese together. In a 9 x 12-inch pan, layer as follows: 1/2 meat mixture, 1/2 tortilla shells, 1/2 soup and sauce mixture and 1/2 melted cheese. Repeat layers and sprinkle with grated cheese. Bake at 350° for 30 minutes or until cheese browns.
