Ingredients/Components

  • red wine vinegar - 1/2 c
  • salt and pepper to taste - 1 item
  • olive oil
  • ripe tomatoes, chopped - 4 item
  • scallions, chopped - 16 item
  • red peppers, chopped - 4 item
  • dried cumin - 2 tsp
  • cans Goya black beans, rinsed - 8 item
  • frozen yellow corn, thawed - 8 c

How to make bean and corn salsa:

Dressing:1 1/2 c. olive oil1/2 c. red wine vinegar2 tsp. dried cumin salt and pepper to taste Mix salsa ingredients together well. Mix dressing ingredients and pour over salsa. Serve with tortilla chips.
