Bean and bacon soup
Ingredients/Components
- dried navy beans 2 1/2 c - 1 lb
- water - 3 qt
- slices bacon, diced - 8 item
- chopped onions 2 large - 3 c
- diced potatoes - 2 c
- diced celery - 2 c
- sliced carrots - 1 c
- 14 oz - 1 lb
- salt - 4 tsp
- pepper - 1 tsp
- bay leaf - 1 item
How to make bean and bacon soup:
Combine beans and water in large kettle. Bring to a boil and boil 2 minutes. Remove from heat. Cover and let stand 1 hour. Fry bacon until crisp. Remove from skillet and add to soup. Cook onions in bacon drippings until soft. Add soup along with bacon drippings. Bring soup to a boil and simmer, covered, 1 hour. Add remaining ingredients. Simmer until vegetables are tender, about 30 minutes. Remove bay leaf. Makes about 4 quarts.Recipe categories: American, Soups & stews, North american.
