Zucchini relish
Ingredients/Components
- sugar - 4 c
- salt - 2 Tbsp
- cornstarch - 1 tsp
- nutmeg - 1 tsp
- chopped green pepper - 1 item
- celery seed - 2 tsp
- ground pepper - 1/2 tsp
- white vinegar
- mustard seed - 1 tsp
- turmeric - 1 tsp
- chopped red pepper - 1 item
- peeled, cleaned and grated zucchini - 10 c
- cleaned, grated onion - 2 c
How to make zucchini relish:
Soak zucchini and onion in large bowl overnight. Combine all veggies in large saucepan. Add all seasonings at a medium boil. Prepare jars, seals and bands. Clean and heat pint jars. Fill to 1/2-inch headspace. Process 25 minutes in boiling waterRecipe categories: Squash, Condiments, etc., Zucchini.
